Holiday Recipes
Latkes
Ingredients
- 3 potatoes
- 1 white or yellow onion
- 2 tbsps of matzo meal or flour
- 1 egg
- 2 pinches of salt
- Cooking oil
- Sour cream and/or applesauce
Shred the potatoes and onion in a Cuisinart. Place the shredded potatoes and onion in a mixing bowl. Add the matzo meal, egg, and salt. Mix. Add an additional egg if the mixture is not holding together. Pour a generous amount of cooking oil into a large frying pan and place on the stove over high heat. Give the oil a couple minutes to heat up. With your mixing spoon, scoop out some of the mixture and place it in the frying pan. Flip when brown. When both sides are brown, transfer it to a plate with a paper towel on top to catch the excess oil. Serve hot with sour cream or applesauce.
